Young dairy producers gathered on
October 25 to celebrate the end of the
harvest at Young Mainland’s Harvest
Party. The event was back in a barn loft
on a Kooyman farm. It was a wonderful
venue and a great setting for the
evening. As always, it was a casual
evening with lots of time to socialize,
listen to the live band – Outlaws and
Lace – dance, and snack on great
appetizers. Young Mainland would like
to thank Jeff Kooyman for hosting the
event again this year.
Young Mainland would like to thank all
the dairy allied trades that sponsored
the great appetizer buffet and the
ever-popular Toonie Bar. Young
Mainland could not hold events like

Mainland event on November 7.
Marcela is a food scientist, trained
as a biochemical engineer and has a
master’s in food science and nutrition
with a specialty in proteins. She has
worked for 25 years in the agri-food

Marcela gave an amazing presentation
on Vitalus and the many products
that Vitalus produces from milk.
Marcela’s presentation was titled “Dairy
ingredients and how they can be used to
fuel product development in functional
nutrition.” They are a specialized
ingredient producer and a global
exporter to over 30 countries. They
take Canadian milk, concentrate the
components and transform them into
specialized ingredients for functional
nutrition markets. They focus on
nutritional value applications – infant/
aging, and industrial uses.
She also discussed milk quality and their
customers’ requirements. Milk must
have a very low concentration of spore
forming micro-organisms. They need to
know the mineral profile because some
minerals have detrimental effects on
the end products or consumers. Milk
must have non-detectable or very low
concentrations of contaminants. They
test for 165 different contaminants. The
free fatty acid profile is also important.
On top of all these requirements, their
customers are also concerned about
the carbon footprint of their products
– they must be carbon neutral or carbon
negative. Animal welfare is also a
concern with their customers.
It was a very informative presentation
and there was a lively discussion
afterwards.
